Dinner with a Trying-Hard Cook


Next week is Holy Week and the Catholic faithful had been admonished to either fast or observe abstinence. I figured, a good dinner before the start of the six-day ritual should be in place.

Here's what I prepared.


Deep fried fish fillet and scrumptious shrimp bathed in tumeric and cummin and fried in olive oil. For carbs, white rice cooked with sprinkles of flax seed oil.


My appetizer is Chinese white fish crackers and Thai peanut sauce as dip. For drinks, I concoted a cocktail out of cantaloupe, Absolut Vodka and Triple Sec.


I cut the cantaloupe into bite-sized pieces, added a little water, and put chunks of ice and blended using the Magic Bullet. The result was a slightly thick drink. I then added a jigger of the Vodka and half a jigger of the Triple Sec, and shaked several times.


For the fish fillet, I used skinless pollock, cut into small pieces and breaded with Knorr Batter Mix and egg, and cooled first before frying. Chinese soy sauce with lime was sawsawan for this.
